This Chicken Fried Quinoa is a great way to curb your fried rice craving! Brimming with chicken, eggs and protein-rich quinoa, it is sure to full you up.

1 cup quinoa cooked with 2 cups water
3 – 4 eggs scrambled
1 chicken breast – already cooked (leftover)
1 pkg. frozen Chinese veggies, thawed
1 carrot cut into matchsticks
1” ginger root – chopped
2 garlic cloves – chopped
3 tablespoons sesame oil
4 tablespoons coconut aminos
First, scramble eggs and set aside. Then add sesame oil to pan and sauté garlic, ginger and carrot until tender. Then add veggies. Warm through. Then add chicken until it is warm. Add quinoa and scrambled eggs. Mix. Add coconut aminos. Stir. Serve
